The question is somewhat misleading. You really cannot say the South was about plantation life, because the majority of whites in the south did not own slaves. The people who owned slaves were the small white elite, who incidentally were the ones who were wealthy enough to have plantations.

Not very many, since the camera was just invented toward the end of the Civil war.
Find or purchase the volume titled " The Civil War" an illustrated history



by Goeffrey Ward and Rick and Ken Burns. You find it facinating.

With many of the pictures, you will witness the brutallity of the Civil War.
Theres a soft covered book, called:The best photos of the Civil War.It was a Fawcett Book, # 487, copyright 1961. It has loads of photos from the war, and its aftermath.
